Sweet and Sour Vegetables
Homemade sweet and sour sauce, served with a selection of vegetables. Serve with cooked rice or noodles (not included in recipe)

- 1 onion chopped
- 2 cloves garlic finely chopped
- 1 tbsp oil
800 grams of vegetables, made up of:
- 300 g broccoli a small head, cut into florets
- 160 g carrot 1 large, chopped
- 1 yellow pepper
- 8 vine tomatoes
- 12 baby corn
- 4 pineapple rings
For the sauce:
- 150 ml pineapple juice
- 4 tbsp apple cider vinegar
- 3 tbsp tomato puree
- 3 tbsp maple syrup
- 2 tbsp tamari
- 1 tbsp arrowroot powder
Prepare the vegetables by chopping and peeling everything (if required)
Add a tablespoon of oil to a pan along with the garlic and onion. Cook for two minutes.
Add the rest of the vegetables to the pan along. Keep on a relatively high heat, stirring regularly for another five minutes. Turn down the heat if the sauce is not ready.
In a separate pot, add the pineapple juice, tomato puree, apple cider vinegar, maple syrup and tamari. Turn on a high heat and stir regularly.
Once sauce starts to bubble turn down to a low/medium heat and sprinkle in the arrowroot powder. Stir in well.
One sauce has thickened, pour over the vegetables and cook for another 5 minutes on medium heat with the sauce bubbling gently. Stir regularly.
Remove from the heat and serve with rice or noodles
