Cashew Sour Cream

A simple cashew sour cream recipe.

Ingredients
  

  • 150 g cashews soaked and drained
  • 1 tbsp lime juice or lemon juice
  • 1 tbsp apple cider vinegar
  • 130 ml water
  • 1/3 tsp salt

Instructions
 

  • Drain the water from the pre-soaked cashews. Put the cashews into the blender. 
  • Add the lime juice, apple cider vinegar, salt and water
  • Blitz the ingredients in the blender until the mixture has a nice smooth creamy texture. This may involve stopping to scrape down the sides a couple of times depending on the type of blender that you have. 

Notes

Pre-soak the cashews for around 15 minutes in hot water, or 2 hours in cold water. If you have a high powered blender like a Vitamix, it is not required to pre-soak the cashews, although it does help with the smooth, creamy texture.
